Super excited to share the whole wheat carrot cake that I made with my twin sister for our 24th birthday. We topped the cake with cream cheese frosting and is hands down one of the best cakes I have baked so far!

    Hey shivesh I tried this recipe out it turned out to be amazing ! I want to make this same cake for my grandparents but they have diabetes can replace the brown sugar with sugar free will the cake turn out to be fine ?

    Hi Shivesh, noticed that you split the batter in 2 batches to bake… did you bake them simultaneously or 1 at a time?

    Considering I have a smaller oven, just checking if it's ok to leave one tin out while the other one bakes… looking forward to your response! 😊

    Splitting a carrot cake with your partner? Easy. Splitting the process of baking a carrot cake with your partner? Even easier! We’ve splitting this amazing Carrot Cake recipe two ways so that you and your partner can share the steps and the spoonfuls.     Cooking time with better half: 30 minutes

    Chef 1


    2 cups whole wheat flour

    1 tsp baking soda

    2 tsp baking powder

    1 tsp cinnamon powder

    Zest of an entire Orange

    3 cups grated carrots

    ½ cup cranberries

    ½ cup walnuts


    Firstly, preheat an oven at 180-degree celsius.

    Now add two cups of whole wheat flour to a mixing bowl.

    Add baking soda, baking powder, cinnamon powder, and the zest of an entire orange to it.

    Mix the dry ingredients well and set them aside.

    Chef 1, it’s time for you to add the dry ingredients to the wet ingredients that Chef 2 has combined. Add them slowly in two batches and mix well.

    Now add 3 cups of grated carrots to the mixture and combine well.

    Time to make the cake nuttier! Add half cups of cranberries and walnuts each to the batter and mix well.

    Transfer the batter into two 8-inch pans lined with parchment paper and bake the cakes at 180-degree celsius for about 30 minutes.

    2 ½ cups vegetable oil

    1 cup brown sugar

    1 cups castor sugar

    4 eggs

    1 tsp vanilla extract

    2 cups cream cheese

    1 cup butter

    2 ½ cups icing sugar


    Chef 2, you can work on the wet ingredients. Add2 ½ cups of vegetable oil to a mixing bowl.

    Now add a cup each of brown sugar and castor sugar to the oil.

    Beat the sugars along with the oil using an electric blender or a hand whisk.

    Add 4 eggs to the mixture (1 at a time) and beat well. Once they are well combined, add a teaspoon of vanilla extract to the mixture and mix well. Now pass the wet ingredient mixture along with some good vibes to Chef 1.

    Time to make the frosting for the cake! Add 2 cups of cream cheese to a mixing bowl and beat it until it is nice and fluffy.

    Now drop in a cup of butter to the whipped cream cheese and beat well.

    Then sift 2 ½ cups of icing sugar into the mixture, mix well, and beat the frosting till it’s fluffy.

    Time to assemble the cakes! Spread the frosting on one of the baked cakes and put the other one on top of it. Now spread a generous amount of the frosting on it, garnish it with some chopped cranberries and walnuts and you are good to go! Devour the delectable cake with your partner!

    Hi Shivesh…excellent recipe! You might want to correct the oil measurement in the video…it says 2 cup..it must be a typo…but it might end up spoling cakes. The written recipe has the perfect measurements. You may want to correct video as per written recipe.
