Naked Strawberry Cream Cake

This big cake is enough for 12-18 portions.
The taste is incredibly good; creamy, not too sweet and delicate.

Ingredients for the cake:
4 whole eggs
200g sugar (1 cup)
150 ml veg. oil (1/2 cup + 2 tbs)
200 ml milk (3/4 cup)
1 tsp vanilla extract
300g fine flour (2 cups)
4 tsp baking powder
24cm spring form (9”)

Ingredients for the sauce:
250 g strawberries (1/2 lb)
50g sugar (4 tbs)

Ingredients for the filling:
1 liter cream (4 cups)
12 tsp cream stabilizer (4pck)
1kg mascarpone (2.2 lb)
100g powdered sugar (1/2 cup)
2 tsp vanilla sugar (1pck)
250 g strawberries (1/2 lb)

Start with the cake base, this can even be done a day before.
Mix the egg and sugar, until it’s foamy. Add the oil, milk and vanilla extract, mix again for a minute. Then add the flour and baking powder, mix for 2-3 minutes.

Pour the batter in a well oiled springform (24cm or 9 “) Bake 35-40 minutes at 180C (360F) on top and bottom heat. Let it cool down at least 2 hrs before cutting into layers.

Prepare the sauce by cooking 250g diced strawberries with 4 tbs sugar. Make it smooth with a blender and set aside.

Now mix the cream and don’t be intimated by the quantity.
Part 1: Whip the cream with the stabilizer (Dr Oetker Whip it)
Part 2: Mix the mascarpone with powdered sugar and vanilla sugar.
Now mix both parts together.

Cut the cake in three layers.
Place the bottom as the first layer, spread half of the sauce on the layer, then spread a layer of cream, add the diced strawberries and cover this again the a thin layer of cream. This part is just to make sure that the second cake layer will stick.
Now place the second cake layer and repeat all the steps.
For the top layer, just use a thin layer of cream. Set aside 2 tbs of cream for smoothing out the sides.
Let the cake set for at least 2 hrs in the fridge before finishing the sides and decorating.
For decoration, I used 250g strawberries and some flowers.

This is not a quick and easy cake but it totally worth it.
