If you like coconut and chocolate combination you should definitely give this recipe a try. This dessert is very delicate and smooth with an intense coconut flavor, simply melting in your mouth. A brownie layer at the bottom followed by a creamy coconut mousse that is topped with chocolate glaze. By far one of the best desserts ever.

Makes about 10-12 servings

Cocoa Brownie
1/3 cup (70g) vegetable oil
1/3 cup (70g) sugar
1/4 cup (30g) unsweetened cocoa powder
1/2 tsp (1g) instant coffee powder
1/4 tsp (1g) salt
1 tsp (5g) vanilla extract
1 large egg
1/4 cup (30g) all-purpose flour

Coconut Mousse
1/3 cup (25g) coconut flakes
7 oz (200g) coconut milk
7 oz (200g) coconut cream
1/4 tsp (1g) salt
1/2 cup (100g) sugar
2 cups (480g) whipping cream (35% fat), chilled
2 1/2 tsp (8g) gelatin powder
3 tbsp (45ml) coconut milk

Chocolate Glaze
5.5 oz (150g) semi-sweet chocolate
6 oz (170g) whipping cream
Chocolate Coconut Shards, optional
2.5 oz (70g) semisweet chocolate
1 oz (30g) semisweet chocolate, for tempering
Coconut flakes
For decoration

    Hi there , thank-you so much for the great recipe .
    I made this for a gathering and everyone loved it 😊
    However I did make a few changes , 1) after making the coconut mouse I felt it was little less sweet for me so I added around 1/2 -3/4 tin condensed milk to get the sweetness I wanted .
    Also I soaked gelatine in water & then heated it to dissolve to add to the mouse mix .
    It’s a yum cake pudding 👍🏻

    I wanted you to know that for 4 years (I think you posted these 4 years ago?) my family here in West Virginia U.S.A. have been making your Parmesan small red potatoes!!!     Hi Ella, this cake looks delicious and not very complicated to make.
    However, it would be great if you also showed how you transfer the cake to the final plate. Because sometimes it may be rather dufficult and the cake can be damaged. And I am sure that a professional like u, has a lot of useful tips. Thanks 🙂
