Now that it’s officially Spring and Easter is just around the corner, I wanted to share one of my all time favorite recipes, carrot pineapple cake! It’s tender and moist and the cream cheese icing adds just a hint of creamy sweetness without going overboard. Even if you are not a carrot cake fan, you will love this recipe! 🐰🥕
2 ½ cups flour + 1 tablespoon
1 ½ cups granulated sugar
1 ⅓ cup vegetable oil
2 teaspoons cinnamon
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon vanilla extract
5 cups grated carrots
½ cup crushed pineapple
1 cup chopped walnuts and pecans
1 cup raisins
2 ounces (¼ cup) cream cheese
1 tablespoon butter
½ teaspoon vanilla extract
2 tablespoons milk, more as needed
Bake at 350 degrees F/177 degrees C for 1 hour or until toothpick (tester) inserted comes out clean.
Note: If you don’t have a bundt pan, you can use a 9x13x2 inch cake pan or (2) 8-inch round pans to make a layered cake with this recipe. Also great for making cupcakes!
