Here my proposal to make a dairy free mousse cake.
I used Soyatoo whip cream and it worked perfectly.
If you can’t find Soyatoo, you can use coconut milk but you’ll have the strong taste of the coconut.
I’ve put the picture of the ingredients of Soyatoo whop cream so you can try to make it at home
In any case, the key is to have bowl, electrical whisk and cream well cold before starting.
Whipped cream foxator is a real help to avoid the cream flopping so make sure to have some.

30cl soyatoo whip cream
250g mango flesh
1/4 cup mango – passion fruit juice (120ml)
35g icing sugar
80g icing sugar
whipping cream fixator
4 gelatin sheets
37.5 cl mango – passion fruit juice
37.5 cl orange juice
7 gelatin sheets
