This is a cake made by myself. I add fresh cranberries to this cake. It is organic, healthy and good cake along with your drinks for snack time.
The Recipe
(I used cranberries as it is in season this September.)
Ingredients
Dry ingredients
2 cups all purpose flour
1 3/4 sugar
1 tsp baking powder
2 tsp baking soda
Wet ingredients
2 large eggs
1 cup milk
1 cup cranberry juice or puréed diluted with water
1 cup canola or vegetable oil
Method of preparations
Mix all dry ingredients.
Mix and beat all wet ingredients.
Then mix all together, beat until all are incorporated lightly.
Preheat oven 275 degrees. Cook the cake for about 30-35 minutes.
For the Icing
Mix 4 Tbsp of apf into 3/4 cup milk. Cook until thickened. Beat 3/4 cup Butter, 3/4 sugar and add the thickened flour.
Cool down the cake before putting the icing.
