THE FULL RECIPE FOR OUR JAMAICAN FRUIT CAKE (CHRISTMAS CAKE)

Without further adieu, here is the full recipe.
This recipe typically yields three (3) 2 pound/ 8 inches cakes.

INGREDIENTS
1 pounds butter
1 pounds sugar
5 eggs
1 teaspoons vanilla
1 teaspoon almond flavor
1 teaspoon rose water
6 cups baking flour
1 teaspoon mixed spice
4 teaspoons baking powder
1 teaspoons nutmeg
6 tablespoons browning
3 cups of your preferred wine (I use Red Label Wine)
1 pounds of blended fruits
1 teaspoons lemon/lime zest.
METHOD
1. Cream butter and sugar
2. Add lime zest to egg and whip
3. Add to cream mixture of butter and sugar
4. Pour in blended fruits to this mix while cutting and folding the mix
5. Add flour and baking powder and other dry ingredients and fold
6. Add spices and browning and wine.
7. Mix all ingredients.
8. Grease or line pan with wax paper/ grease paper
9. Pour in mixture to near top of tins (leave only about 1/2 inch at top)
10. Bake between 250 and 300F for approximately 30 minutes.
That’s it!
Remember…
✔ Spray wine/rum mixture on completed product. And continue to do so every few days until ready to serve.
✔ We recommend you bake a week in advance of having your cake to get the best flavour.

Sorry it was the interviewer who made the mistake and said 3 pound a flour and Miss K agreed but she said 12 cups of flour which is 6 pounds of flour.
Not every body know lime especially if they are born abroad.

Too much interruption by the interviewer causes confusion
8oz = 1 cup
16oz = 2 cups
16oz= 1 pound
Therefore, 6 cups = 3 pounds
However you said 12 cups
Therefore you are using 6pounds of flour and that would give you 12 cups of flour.
But you stated 12 cups of flour which is 3pounds of flour.

1 cup of flour we use 1tsp of baking powder would this make the cake too light?
People in the olden times would have used fresh fruits and sugar with wine or water and let it ripe overtime to make wine with fruit then bake

Can you dry chou chou,pumpkin, neeseberry, cherry, ethiopian pear, June plum, sour orange and lime and use this instead of buying the fruits. We have sun, sugar, and all the fruits why import. This will provide work for our people.

Many thanks for sharing your recipe for how to make Jamaican fruit Cakes.And at a young stages I use to see my Mom soaking the ingredients for the fruit Cake into a pail for months until the night before Christmas.My Mom would decided to ask me to grease the cake can then,She would pour out the ingredients into the cake pan and place them into the oven to bake. My Mom use to bake for the House hold and also to sell, Now Mom is not in good Health to bake any more.At a younger stage in Jamaica i use to love to eat the fruit cake ingredients,The cakes that you are Baking looking very tasteful. When I mom use to lived in Florida she use to mail me fruit cake for Christmas now I of to do without it for Christmas but that's okay.Merry Christmas to everyone in Jamaica be safe stay Bless.
All of the golden nuggets are important – I like the spray bottle and I mix the wine with rum too.
