Fresh Fruit and Whipped Cream Sponge Cake
6 small eggs
1 cup sugar
1 1/2 cup sifted flour
2 oz. melted butter
1 tsp. baking powder
1-2 tsp. vanilla
1-Mix flour and baking powder then sift it.
2-Beat eggs, sugar and vanilla with an electric mixer for about 8 to 10 minutes until the mixture gets very light yellow color and double in size.
3-Add and fold little by little the sifted flour carefully into the egg mixture.
4-Add the melted butter very carefully and fold again.
5-Pure in 9″ round pan cake. Make sure to put parchment paper in the bottom of the pan then brush it with oil.
6-Bake at 350 for 30 minutes or until the inserted skewer comes clean .
7-Cool the cake upside down on a wire rack.
8-When it cools down slice it into 3 layers.
1 cup milk
1/4 cup sugar
2 Tbsp. cornstarch
1 tsp. vanilla
Mix all the ingredients except the vanilla and cook with stirring constantly on low-medium flame till the mixture gets thick then add the vanilla and mix very well. keep aside to cool down then put it in the fridge for a couple of hours. when it is cold mix it again so it is fluffy.
2 cups cold heavy cream, whipping cream or double cream
1/4 cup powdered sugar
1 tsp vanilla extract
Beat whipping cream with an electric mixer on low speed for 30 seconds, then add sugar and vanilla and gradually increase the speed, beating until the cream becomes thick. This will take anywhere from 5 to 8 minutes or so.
*Bavarian cream: Pastry cream + Whipped cream + Flavor ( My flavor is vanilla) ( it can be chocolate or coffee or caramel or jam) + Sometimes unflavored gelatin to thicken the cream
Add a little of whipped cream into pastry cream and mix well then fold the rest of the whipped cream and set aside.
How to put the cake:-
1- Cut up mix of fresh fruits like Banana, Strawberry, kiwi, Blackberry. I also used can of Apricot and pear.
2- Put the first layer of the cake in the spring form pan and sprinkle it with syrup that comes with fruit in the can.
3- Spread a thin layer of any jam if your choice. I chose apricot jam.
4- Add a thick layer of the Bavarian cream and top it with the pieces of fruits of your choice.
5- Do the same steps above with second layer of the cake.
6- Cover with Bavarian cream and decorate as you like.
