In this video I bake the best Red Velvet Cake that I have ever made in my life! I give all the credit to our fellow YouTuber, Cooking with Caroline and her recipe. I did change a few things so here is the full recipe.

Easy Red Velvet Cake
All ingredients should be room temperature!
1 cup Peanut Oil
3/4 cup Buttermilk
2 Large Eggs
1/4 cup Strong Coffee
2 teaspoons Vanilla flavoring
2 teaspoons White Distilled Vinegar
1, 1 Ounce Bottle Liquid Red Food Color
2 Cups All Purpose Cake Flour
2 Cups White Granulated Sugar
5 teaspoons Unsweetened Cocoa Powder
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1 teaspoon Salt
1/2 cup Sour Cream
3/4 to 1 Cup Roasted Pecans or Walnuts
Pam Cooking Spray
3 to 4 Tablespoons Flour to dust the cake pans

Preheat oven to 350 Degrees F

In a large bowl, mix buttermilk and peanut oil using a hand mixer. Add the eggs one at a time. Mix in coffee, vanilla, vinegar and food color. Mix until well combined.
In another large bowl combine flour, sugar, cocoa, baking soda, baking powder and salt mix together with a whisk. Sift the ingredients before adding to the wet mixture.
Add half of the dry ingredients to the wet ingredients. Mix well scraping down the sides of the bowl. Mix in the sour cream. Add and mix the remaining dry ingredients. Mix well. ( Note that the batter will not be thick. It will be on the thin side.)

Prepare cake pans by spraying them with Pam then dusting the pans with flour, removing the excess from the pans. Divide the batter into the two cake pans about 2 3/4 Cups each if you need to measure. Bake at 350 Degrees F for 25 to 30 minutes. Checking at 25 minutes.

Once done allow the cakes to cool in the pans for about 10 minutes then remove them from the cake pans and allow them to cool completely on a wire rack.

Cream cheese frosting
2, 8 Ounce Blocks of Cream Cheese
2 Sticks of butter
4 Teaspoons of Vanilla Flavoring
6 Cups Powdered Sugar
2 Tablespoons Heavy Whipping Cream

Cream butter and cream cheese together. Add 2 cups of powdered sugar and 1 teaspoon of vanilla mix well. Add two more cups of powdered sugar and 1 teaspoon of vanilla mix well. Add the last two cups of powdered sugar and two Tablespoons of heavy whipping cream and mix well. If the frosting is not the consistency you like you can adjust it with more powdered sugar or more heavy whipping cream.
Place one cake on a plate and frost it with how much frosting you like. Place the other cake on top of the frosted layer, round side up and frost. Sprinkle with nuts if you desire. We love the cream cheese frosting so this recipe is two batches. There will be frosting left over if you make the double batch. Enjoy!
